Any recommendations for production guides? I'm dipping my toe in the sparkling pool this year, and as I start to contemplate going from base wine to bottling, I realize there are some holes in my half-assed education. So, I'm looking for a nuts and bolts reference for things like SO2 targets, the timing of tirage, bottle fill heights, etc. Anything good out there?
