Went back to the 2018 Donnhoff Hermannshohle GG after a week in the fridge. It is much more open and expressive, love it!

Re: What bottle of wine did you open today?
Yes, my notes on CT from Cindy's bottle:
Pandemic Zoom Wine Tasting (Home): Tasted blind. Light ruby, minimal bricking; a bit richer and denser on the nose, seems a bit tight but coiled with a lot behind it, dark cherry with a bit of spice that reminds me of Vosne; palate is light bodied, elegant red fruits, nice mouthfeel, balanced low-medium tannin, excellent medium-plus acidity; medium to medium-plus finish. I like this. 93
With air, this shut down fairly hard. Hard to rate now, ~90. I think when this opens up it will be excellent value...
I would recommend holding, unless you had a pressing reason to open. Either way it shows well.

2019 La Follette Sonoma Coast Pinot Noir. Pretty impressive for as young as it is.

Re: What bottle of wine did you open today?
2001 Domaine Denis Bachelet Gevrey-Chambertin Vieilles Vignes - Took the best part of 7 hours to open up but pretty much at peak now. Very muted at first on both the nose and palate with a strong bitterness. A Vosne-like spice emerged with a little sweet kirsch-y finish, before evolving into a more Gevrey-like rusticity of sous bois and mushroom. Interesting that the wine opened up not only in terms of the volume of flavour, but also texture which became a lot more sensuous. Good concentration from old vines, impeccable balance by a good producer. Wines like these are the reason why people fall into the rabbit hole of Burgs. Lovely.

Dinner tonight was pick-up from a nearby Italian restaurant - simple & comforting - the wines too: 2019 Forchir Pinot Grigio “Lamis”, and, 2013 Antinori Badia a Passignano Chianti Classico Gran Selezione (decanted for aeration for 2 hours before pouring).

I have several CT notes on this wine. I love it. It's young and needs time but it has beautiful fruit and impeccable balance and the soulful character that makes Lafarge so special.

2012 Arnoux-Lachaux Clos Vougeot
Night 1: The nose has notes of bright red fruit - cherries and perhaps a hint of strawberries. There is a sweetness to the fruit. There is also almost a savory element that almost splits the line between herbs and pepper. The palate is linear and framed with a bright, integrated acidity. Like the nose, the fruit is bright red cherries. There is also a floral element. The wine is relatively tannic for a Burgundy and concentrated - mouth coating. Definitely primary but enjoyable. It has a long life ahead of it.
Night 2: similar to the first night but certainly more open. The palate is still linear but the fruit is more visible and delineated. If you opened it now, I would decant it and give it lots of air.

.375 of 2012 Willi Schaefer Graacher Himmelreich Auslese - Very enjoyable but not for the faint of heart. This has ripe, bold tropical and exotic fruit, with an opulent texture, and sizzling acidity. Given the hyper-charged components, the balance is impressive.

Re: What bottle of wine did you open today?
84' Spottswoode. I opened one of these in May and the bottle was over the top. Fruit was gone and it was just not as pleasant as could be.
This bottle jumped out on the nose as soon as I removed the cork. Took a sip and found it to be quite large. Came back for another sip 20 minutes later and it started to open up some. 20 minutes after that and it was almost singing. About an hour into the pour I paired this with 12 oz Flannery NY steaks and found the wine to be explosive with the fruit still shining. I will chalk up the previous bottle to bottle variation. Another great bottle of Spottswoode.

Another 2017 Tollot-Beaut Chorey-lès-Beaune. This is my third and last bottle. Seriously, this is so, so good - beautiful pure red fruit coulis, just a bit of sous-bois, and a silky texture. I wish I had another case.

Marc Colin et Fils Chassagne-Montrachet 1er Cru Les Caillerets:
A hint of reduction on the nose. The nose contains notes of apple, baked bread and white flowers. The palate is deep and concentrated with notes of ripe apple, pear, a touch of lemon and a streak of mineralite. Definitely a slightly richer white Burgundy but still has the acidity to stay more than in balance. A very nice premier cru.

2018 Ferme de la Sansonnière (Mark Angeli) Rosé d'un Jour - Word play on Rose d’Anjou as it wasn’t accepted by appellation rules. I didn’t expect this to be sweet, it has a hefty amount of residual sugar but still manages to be light and elegant. Blood orange, peaches and a honeyed note. If you like bubble tea this is definitely a wine for you. Fits into the category of fun natural.
2018 Domaine des Marnes Blanches Chardonnay Côtes du Jura En quatre vis - Classic Jura Chard made in ouille style with exotic fruits, salinity and a waxy honeyed feel.
2017 Domaine William Fèvre Chablis - Inexpensive and easy going but a little rounder and less acidity than I would have liked from a Chablis. Definitely a Sauv Blanc character to this.

Re: What bottle of wine did you open today?
2016 Jean-Philippe Fichet Bourgogne Blanc Vieilles Vignes - Supposed insider’s wine as one of the sources is beside the Charmes plot in Meursault. Not showing much unfortunately at this stage - didn’t have anything that pointed towards a burgundy white. Only redeeming factor was a decent finish for a Bourgogne Blanc. Not a fan of 16 whites in general so will seek out another vintage of this.
