Opening a young Auslese is often a display of hope rather than a means to the intended end. There’s so much richness, sweetness and sheer mass that it’s hard to discern the overall form of the wine. That was definitely the case right after I opened this wine. It was essentially unctuous with no defining characteristic to grab a hold of. I put it in the fridge for a night, and 24 hours later some sense of definition emerged from what had been a formless mass. Nectarine fruit was dusted with baking spices, drizzled with honey, and served on a platter of cold rock salt. Still so much richness that it was nearly a sensory overload, but I steeled myself for the task, and bravely powered through the bottle. There’s lots of deliciousness to be had, even at this young stage, but this feels like a long term proposition. If I had another I would wait fifteen years or more.
