Round nose with fennel, anise, bees wax and a touch of lime zest. Palate is round, warm and full with a solid frame of mineral acidity that balances the attack and creaminess that coats the palate. Medium full body. There’s a chalkyness on the finish with more bees wax. (90 pts.)
Glad to have picked up a couple of cases last year. Pairs beautifully with butter poached fish and should develop more complexity with some age.
