2010 Servin Chablis Blanchots Grand Cru
Color is medium gold/amber. Initial aromas are a mix of butterscotch, hazelnut, and honey. Palate has toasted hazelnut, apple, and brine that lead into a medium-short finish. A stark transformation from last bottle sampled a year or two back. This one seems advanced and heading toward premox death. Drink up.

2008 Chandon des Briailles Pernand Vergelesses 1er Cru
Color starts out straw gold and deepens over the course of consumption (about 2 hours). Last glass is amber colored. Aromas are of honeysuckle, pear, nutmeg, and lemon. Palate has lemon, mineral, and tart apple initially. This transforms to include pear, nutmeg, honeycomb, and some lime. The finish is medium. This is drinking really well and delivered a “good bottle” experience. It could develop further, but the color transformation with two hours of air gives me some concern that it may turn the corner quickly. Drink or hold.

I thought the Servin was drinkable, but not quite right. The Chandon des Briailles confirmed this suspicion. Both were last bottles, so there’s not going to be another chapter to this particular book.
