By the way, I have no clue how big this one is going to be, but there's a strong chance it will hit the 100 person limit. That said, if you aren't REALLY interested, maybe reconsider...but if you ARE interested, you better not show up late! If you do, keep trying, as inevitably people jump off and spots open up if you keep trying

I created a Facebook event for today's session, and on there I have 50 interested or going, plus the thousands of views this thread has received...I wonder if I should amp up the number of attendees or just allow for those who can't make it on to watch the recorded video?

I used to do a burger blend with Prime Short Ribs, Prime Hanger Steak, Wagyu Chuck and Prime Brisket Fat Blend that made it hard to form patties because it stuck to my hands while trying to work it. Good for smoking the neighbors, great for juicy burgers. The only thing missing was the dry aged steak ends that I subsequently added to all my blends because of the intense flavor I love.

Excellent event. I learned a few interesting things. Dry aged ends and as much fat as he would let me blend in was my favorite. My son once went for bacon, Italian sausage and skirt steak. That was pretty intense.

I think the max we could get on the burger builder was 28%, which was always my target.

I had to watch the replay (thanks!) today, but did I hear them right about their suggestion for steak tartare to use the dry aged filet tails? That seems like it would add a lot of funk to a raw dish. Or, were they talking about filet tails, but not aged?

In for the BBBB, my dad was part owner of a butcher shop in Seattle and would cut meat on weekends.This brought back a lot of great childhood memories for me, and my wife was surprised I could answer most of the questions [wow.gif] .

Big fan of Flannery. Except of the Hangers of course been buying only the California Reserve steaks does anyone have any thoughts on how the Midwestern of the same cuts differ

Anyone have a copy of Bryan's hilarious open letter he wrote to Omaha Steaks in response to the cease and desist letter they sent him for using a similar moniker for one of his categories of product? I would love to read that again.

The two hours seemed to take 20 minutes. I used to be out there a lot and would stop in to see Bryan and pick up a few steaks. I miss that a lot. Such a gentleman. So authentic. I need to go and order some hangers...
