TN 2007 Chevillon Les Cailles

Tasted 1/4/19. This bottle has an incredible amount of fruit – I find Chevillon’s Cailles, St. Georges and Vaucrains to be generally incredibly long-lived but it is not a vinous crime to drink the '07 . I think a lot of village and premier cru '07s are in a good place right now and while they will maintain not sure they will improve. Although these wines have escalated in prices they haven’t exploded like some other producers. This wine has the mineralty and rusticity of an NSG while maintaining elegance and has aged nicely. Quite red fruited and forward. Recommended. I relish the old labels on Chevillons as the new labels drive my crazy.

Cory,

This is a delicious wine. I became a fan of Chevillon after tasting it on release. Thanks for the progress note.

Cheers,
