TN: 1979 Henri Maire Arbois Vin Jaune (France, Jura, Arbois)

    The cork was soaked through, but the wax capsule prevented leakage. Very solid wine on a par with the 1976 and 1978 I’ve had previously. Medium brown color with the appropriate yellowish rim. The Sherry-like acetone notes were definitely present but melding well with the fruit. Great minerality, with citrus notes and caramel finish. The caramel is a flavor note, but not a sweetness note. The acid and acetone were perfect with the lobster dish it was paired with because the fat of the seafood and the sauce balanced the acetone completely. Drink now and for years to come. But I’m out!! John, I love Vin Jaune though haven’t had much. Thanks for the note, this sounds truly amazing.

The characteristic element in both Vin Jaunes and biologically aged Sherries is acetaldehyde, not acetone.

I’m not saying this wine didn’t have “acetone” aromatics (VA, ethyl acetate), but you seem to be talking of another thing.
