Domaine Pierre-Louis & Jean-François Bersan Saint-Bris Fyé Gris 2017
Found in a small Paris wine shop.

I believe that is Sauvignon Gris which is one of the permitted grapes for the Saint-Bris appellation. That is a name used for the grape in the Loire where it is more widely known but I think the spelling is Fié Gris.

Yup, Fié Gris, aka Sauvignon Gris.
It has a particularly exotic aromatic range, is not quite as acidic as Sauvignon blanc.
Goisot makes a particularly good one from Saint Bris that is his Saint Bris Corps de Garde bottling.
