(And I thought 4 per variety is all too little, since having tasted some +300 different varietal wines, there's a lot to choose from.)

Not ready to rank them, but these are probably my favorites . . .

Red:
Cabernet Sauvignon, including blends
Pinot Noir
Sangiovese
Syrah

White:
Chenin Blanc
Sauvignon Blanc
Melon de Bourgogne (Muscadet)
Riesling

A very good point. I guess I don't think of Sherry in general as being "white wine".
Ripe fruit isn't necessarily a flaw.
