TN: Two at Republique (Falmet, Rossignol)

Quick trip to LA, did a quick dinner at Republique which was as good as usual. Got our usual space and worked with a somm that was new to me, Nina, who was great. Republique is a place where you are taken care of if you’re a regular and spend money, for better or worse. I make it a point to go at least 3-4 times a year with bigger groups so for me, it’s more towards the better.

Nathalie Falmet Cuvée Terra Extra Brut BdB 2012

This was stunning. Laser-like acidity and focus. Very crisp and precise, and brilliant with charcuterie and cheese. Should’ve bought this by the case.

2009 Nicholas Rossignol 1er Beaune Clos des Mouches

I’m a big fan of the Drouhin version, and when I saw this from one of my favorite producers I couldn’t resist. This is at once similar yet different than the Drouhin but imo equally good. Oak was present but well integrated. Sour cherries on the nose and palate with earth and sous bois. Fantastic power and class on the finish. Is this more rustic than top Volnay or Chambolle crus? Certainly, but if you said this was a top Nuits or Morey cru, blind, not sure i’d disagree. Went back and cleaned Benchmark out.
