NV Valdespino Jerez-Xérès-Sherry Palo Cortado Viejo C.P. - Spain, Andalucía, Jerez-Xérès-Sherry (12/1/2018)
Fabulous, rich, dry Sherry that showed a real depth of toasted nuts, dry honey, subtle spice and a hint of orange zest. I served it with French Onion Soup, and there were fireworks. The food and wine made for a match that enhanced both. Wonderful Sherry, that is also a great value.

Ripe fruit isn't necessarily a flaw.

This was dry...and so delicious. Drank way too much of it.

Normally PC doesn't have any RS. That's added to things like cream sherries and others. Can be pretty good, but isn't necessary.
