It’s Dungeness crab season. What’s your favorite wine pairing?

One of the best parts of holiday season on the west coast is the start of crab season and commercial fishing starts next week. Tho I am a fan of Sauvignon Blanc for a drinking, I also like a chilled Beaujolais(one of the only times). Any other recommendations?

We just did a crab dinner last Friday, had several whites that were all great pairings: Austrian Riesling, a German Kabinett, Chenin Blanc, a Viognier, and of course Champagne.

For wine, I really like acidic, crisp Chardonnay when the Dungey is served simply steamed with drawn butter. Think Morgen Long or Walter Scott.

That said, I actually sometimes enjoy a lighter-peat / smoke single malt Scotch with Dungeness crab.

It's hard for me to imagine something better than champagne for the pairing.

Interesting. I had never considered butter for Dungeness. I will try it and see! I do spritz a little lemon juice here and there.

Definitely an acid issue. You want something that will cut through the crab and/or butter. Too fat a wine and you will lose a lot of flavor with the crab.

All joking aside, there's some amazing chinese preps for dungeness crab. One of my favorites is a simple soup/stew with mung bean noodles, tofu and napa cabbage (creamy white pork soup base). Just let the crab boil in the soup. *drool*

I admit to having ever used butter with crab, but it's traditional with lobster, and I've found anything but a really crisp un-oaked Chard is a terrible match.

I will confess that I do like a good cocktail sauce with crab, particularly if the crab is not ultra-fresh (never with DK's crab!).

Gewurztraminer and Pinot Blanc often show up with our Dungeness crab cakes. Crab lasagne (recipe from Nick's in McMinnville is fantastic - https://www.northwestwininganddining.co ... t-lasagne/ ) gets Champagne.

This raises a good question. If you are having any seafood with cocktail sauce, what works best then (or least bad anyway)? And I’m asking about wine, preemptive block on all the droll “just drink beer” and sake and whatever else comments.

When I get good fresh Dungeness, I eat it unadorned. I do the same with super fresh briny oysters.

With raw seafood, I like to taste the sea ... not butter or vinegar or sugar in sauces.

Cocktail sauce is ambiguous ( to me anyway) but both are wine killers. Slightly surprised to see it mooted here.

The North American version probably worst and I just about never use it any way.
The version I grew up with (I’m from the Prawn Cocktail Years) and do make from time to time (tarted up with some cognac tarragon and a touch of Dijon).

For that, I tend to look for a fairly neutral white ideally not expensive and just a small pour to assuage those who can’t eat without wine. Or SA Chenan Blanc and Fino sherry too.

If it has butter, IME, it works best with something with both lots of body and lots of acid. That's what I'd look for, regardless of region. You can find it in Champagne or Jura or Chablis or Fruili or Albarino or Fiano di Avellino. But it's more about the individual bottling than about the region.

No/low dose BdB Champgne
Chablis
Mâconnais Chardonnay
Aligoté
Melon/Muscadet

Anyone who would serve nature’s finest shellfish with ketchup probably puts it on hotdogs, too...

An older bottle of Schramsberg rose.

But I approve of the Pinot Blanc and Muscadet suggestions, too.

Though really best pairing would come from Pacific Coast.

I'm a little surprised there is only one Sauvignon Blanc suggested. Dungeness is really sweet, and I find it goes amazingly well with Sav Blanc, which would mean Sancere.

Steamed crab with lime, salt, and pepper = riesling (off-dry, GG, or Austrian)
Any other way = chardonnay or champagne

I agree. I also enjoy Pinot Gris and Pinot Blanc with fresh, cold, unadorned Crab. No butter please.

[cheers.gif] If you try it, post here and let us know what you think. I did this with my cousins two weeks ago with some fresh Dungeness and a nip from four different Oban bottles: 14, 18, Little Bay, and...I can't remember the fourth. Shocker.

Mostly sav blanc with a hint of semillon, nice body without the chard fatness. Decent acidity, no malo. I think it's a lovely pairing with crab.

Dammit, now I want crab. Every year, my friend and I buy about 2 crabs/person, and we eat nothing but the crab until we can’t eat anymore. It’s glorious, especially with champagne.

You guys know Dungies come with their own butter right? flirtysmile Why add some from a cow?

Oh, and local Oregon chard with some age, or Pinot Blanc for me.

My go-to is Chablis. Most of the other suggestions work fine, and I'm going to have to start opening Champagne more on non-holidays.
One wine that does not work for me at all is oaked Chardonnay (neutral wood OK).

Champagne. I was told a long time ago by a wise person that we usually have it all wrong. Birthdays and wedding no one is paying attentional the wine. On the other hand we should always have a bottle ready as a tonic for that crappy day at the office.
So yes +1 on the non holiday thing.
Oh did I mention he was ITCB ? :)

Traditionally this is true, but note that the northern half of the West Coast is delaying the start of the season a couple of weeks due to crabs being undersized.
I'm assuming this is due to growth being slowed by cooler ocean temperatures in some areas.
Look for supply to begin to peak around mid-December.

I usually get my first batch from the fishermen at Moss Landing, south of Santa Cruz Ca. They were able to start fishing today. Heading down tomorrow. Have an Ultramarine Bdb, a Dirty a Rowdy Semillon, and a Lichen sparkling Pinot Gris set to choose from.

I've been in Japan for the last two weeks, first in Hokkaido, where the king crabs are in season, then in Kanazawa, where snow crab has just come in. Must have eaten kilos of the stuff so far. Not Dungeness, I know, still our pairing findings are applicable, I think - champagne with the males or when eating just the meat (or certainly chablis or albarino, I think, but no access here) and sake with the females or when consuming the gooey parts in quantity. In Kanazawa, the common serving has been steamed with a side of vinegar for dipping.

I've done the peated scotch thing with many shellfish before and agree it can be great.
