How was that 01 Chave? I have a mag just begging to be opened.

And the aged Ampeau meursault with black garlic risotto sounds heavenly.

Some creative pairings too: salmon/barolo and foie gras/cdp?

I repeat: Wow.

CT crowd are good people. Nice event.

The Ampeau pairing was killer.

I’ll add the '93 Colgin to Scott’s notes on top wines. Shockingly young still.

I missed Sunday, so can’t comment on the Chave (sadly).

60 bottles doesn’t seem like a lot when you post it with enough breaks. [drinkers.gif] grouphug

The word “wow” has come up. It fits the occasion!

Let the Chave sleep.

The aged Ampeau and the risotto were fantastic.
The Salmon worked out well with the barolo as the bacon, potato, and hollandaise helped smooth the wine out.
One of my favorites was the scallop with qual egg and caviar with the Salon Thursday night.
Most all of the wines could be WOTN at some of my monthly tastings…

I also agree with Scott - don’t pop the 01 Chave (especially a magnum). You have time on your side. [cheers.gif]
