We spent two days with Bourgogne Gold Tour (out of Beaune) this past spring, and I can't recommend them highly enough. We had a hard time getting in with many of the smaller producers (vs the bigger, more commercial places), hence the reason we did the private tour. BGT takes all of the legwork out...

I would be curious about the LIQUID temperature and not the AIR temperature, as it should fluctuate much less.
