Help to pick unusual wines

Need help picking a few bottles for a tasting, topic is very unusual places. Wines need to be reasonably available. So think Greece, Croatia etc. prefer dry wines so nothing overly sweet, can be red or white, sparkling is fine as well.

Not doing it has nothing to do with fancy handles, its just basic kitchen habits, same as i never put soap near my carbon steel pans

Simple answer is that carbon knives will rust in a dishwasher and any wood handle will shrink

I have some Butch Harner steak knives, nowhere near as attractive as yours but similar in terms of sharpness. I dont think anyone really knows what they are missing until they eat a steak with precision cuts, to me it makes a big difference

Buy a car and fill with gas in the UK, buy a house, eat out, drink out, pay income tax, buy good cookware any of these will make you beg for US pricing.

I caculate my overall spending power is at least double in the US over UK

I know that Cognac and Scotch dont age as such in the bottle but at what point do they start to fall apart ? ie if you have a 50 year old cognac how long can it survive in the bottle before harm due to old age sets in ? 10 years ? 20 ? 50 ?

I recently traded for some Ramey cabs and the difference between the standard cab in a normal bottle and a SVD cab in a premium bottle is vast, the premium bottle almost looks like a magnum.

If you have say 200 bottles in a cabinet that's a 250+ lb difference, for what benefit ?

Publican is great but horrifically expensive and i did not see many good steaks, mostly cured meats. Butcher and Larder was OK but not tried the others. Does Eataly have a real butcher ? or more selling pre packaged stuff ?
