In my personal experience, It really depends on the quality and structure of the wine. Cheaper wines that I have recorked and returned to the cellar, were shot the next day. But on the other hand, some Saxum's that I did this with were better on day two and three. I used to vacuvin, but I don't both...

Had this wine several times. I agree with your notes. In my opinion, as good as it is when first opened, and it is very very good, it’s much better on day two. Is also just getting into its peak drinking window. I’ve enjoyed Saxum in the 6-8 year window the best. So this is in its prime drinking win...

We had 11 vintages back to 1991 a couple of days ago. The 2008 was really nice, although it was paired against the 2002 and 2007, which are blockbusters (02 was my WOTN).
That sounds like fun. I was involved in a similar tasting back many years ago. Probably need to get another one set up.

Not sure how some wineries charge for shipping. I don't care. I only look at my final cost per bottle. It's not hard to hide shipping costs in the bottle cost so the final cost is the only thing that matters.

Had an 01 HSS several months back. Pop and pour. While good at the start it was really singing several hours into the meal. My advice, a one to two hour decant should be about right. Very little sediment.

Looks like you have already identified your problem. Just make sure that there are no ways for the hot humid air to get behind the spray foam. It needs to be 99.99% air tight for the foam to work properly. After all isn't that why you used it? It is the best insulator/vapor barrier product to use. I...
