Re: Peter Luger's - no corkage and bad reviews

I understand luger’s isn’t what it was - it’s gotten twice the size, tourists killed the culture, and the original waiters are playing a role versus what it used to be like. The only problem I have is people saying the steak has never been great. High heated(1500 degrees or whatever), super aged fla...

I would imagine the quality of the meat has gone down even though probably not lugers fault. Prime steak is now a hot commodity across the entire USA so the days of them getting the pick of the litter probably is much harder.

If you would like the point made with no hyperbole, very well. The “rule of 15” has nothing to do with checking in on wines as the develop. If you want to do that, for the intellectual curiosity, and you find the experience edifying, you should. But it’s completely unrelated to the point people are...

My experience with the 2017 was that the frame of the wine (floral, entry, exit) all had a distinct northern Rhône resemblance. The problem I saw with the wine was 1) acidity. This is my least of all problems and it’s probably subjective. maybe it has a little too much acidity although some Cote rot...

I think the OP misunderstands the role of sulfur in the aging process. It doesn’t. Sulfur in...

I think wineries should expect less people over time to be buying case(s) of $40+ wine at a time.

With the combination of infinitely more wine to choose and genx/ millenials wanting variety the old days of people having cases of wine in their cellar is slowing.

Just my opinion.

Alan,

Co2 itself isn't an oxygen scavenger but in the actual fermentation process yeast consume oxygen and one of the biproducts is co2.

I don't know the success of it but if a bottle does a mini petillant process at the end it would reduce the oxygen I believe.
