StLuis style spareribs using hickory and pecan, with home made BBQ sauce. No foil, went about 6 hours, starting with a cold smoker at 225.

As noted by John S, only the high density closed cell foam acts as a vapor barrier, (better described as a vapor retarder), the low density type (open cell) requires you to put in plastic sheeting for the vapor retarder. The low density type is sometimes referred to as 1/2 pound foam.

Annual Christmas Eve, Eve party, finally tried the reverse sear on the tenderloin which turned out great (from Costco) but the best of show was the wife’s crab cakes cooked in the wood fired oven with a chipotle remoulade.

Pulled pork for the company potluck.
9 lb shoulder took 12 hours at 225 and cooked to 194, wrapped in foil and kept in a ice chest for one hour.
Bone slid right out.
