Personally, that's way too many cities in two weeks. If you factor in travel between cities, you're really only spending a day in each place. To each their own, obviously, but I prefer fewer cities for a longer period, and then make the odd day trip if I have a car.

Why not rent a car and drive from Barcelona to San Sebastian? It's only 5-5.5 hrs on the toll road. Pick up the car at the airport on your way out of Barcelona and leave from there.

CVNE and Roda have drop in tasting areas also. Roda also often pours back vintages and flights, and you can even order a little jamon iberico to snack on while you're at it.

BTW, 100 Maneiras is a tiny room - only 30 seats or so. Be sure to have a reservation.

I stayed at a gorgeous little boutique hotel called LX Boutique Hotel and loved the place. Best rates by booking directly on their website. I highly recommend it.

For acid, I use lime juice and supplement that with grated lime zest. Alternatively, a good quality 10-12 year old sherry vinegar also works. I also use mint (instead of basil) and sumac, when I have it available, for another layer of flavour.
