We opened a 2012 Reva a few nights ago. Big, rich, thick, ferric, raisins, prunes. Elegant isn’t a word I’d use to describe it. Unctuous, decadent and a bit brutish yet still tasty in its own right.

I think a major component is that demand grew almost overnight and with little to no track record. This would necessarily exclude old world wines wines with decades (or centuries) of pedigree. Price was initially driven by demand, but not necessarily anymore. I’d like to think supply plays some role...

You can add prior, during or after fermentation. Changes how they additions may be reflected in the finished wine, but there isn't a rule as when to make additions.
