Also concerned to hear about Cagen. They turned me on to flying fish, and I appreciated that they served fish that were not commonly found in the states. Fine Tea especially Chinese Oolong & Puerh.

Puerh & Oolong Tea reflects terroir.
Tea has varietals that produce red & whites.
Puerh and certain Oolong improve with aging.

Served in Pinot glass at Republique. Thin and acidic similar to 166e but this also has a green bitter component in the finish that is unpleasant. As good as 165e and potentially 164e are the 166e and 167e are not.

Most of my 2002 Fevre Chablis across all of the Crus were heavily pre-moxed and I haven’t picked up a bottle since.

The Gala Dinner is a huge tasting event to discover new wines. It may be excessive but that’s one of the goals. Unfortunately the way prices have escalated recently it may be the only way to experience some of the wines now.

First from a case imported by Kobrand was firing on all cylinders, thankfully. This bottle has blossomed into a bigger wine than previous bottles though still smaller scaled than the 2004.
