I have both eurocave units and the Artevino. Main difference I see is the shelving in the Artevino are a less expensive design and do not use the rolling shelf design. The side walls are also a bit thinner, less insulation I guess. I use wireless tag units in both to monitor temperature and humidity...

We will use the bone in split chicken breasts.

Salt and pepper all sides, also use dried Italian seasonings on all sides.

Roast at 400 deg.on a wire rack above a pan.

Cook to 155, about 1 hour

Rest and remove the meat from the bone to serve

Having this tonight after a 1 hour decant. A slightly lighter style Pegau. Color is a deep garnet, bit of roast meat, pan fond on the nose waiting to be released. Palate is a carry’s through that roast meat with some black plum, shorter finish.
