The '09 Roederer Starck is pretty darn lean and tastes more shrill that zero dose wines I've had from Laherte and Bouchard (the latter two feeling as natural as a still white wine). Workshop in downtown PS is a great spot. And over in Rancho Mirage, the Edge Steakhouse at the Ritz is super nice. Get there early, grab a drink, and head outside to soak in the views. Its a bit spendy but worth it. Also, perfect place to bring a nice bottle. They will get you for a corkage fee but...

2006 Billecart Blanc de Blanc - 11 years on the lees, sourced from four Côte de Blanc grand cru vineyards, including Chetillons. 6g dosage. This was super. Bright energetic and fresh, all sorts of orchard fruit and great balance and acidity. Superb length.

This was a killer dinner. Fu's notes are spot on, but the quality across the board was really high, except the HB :(. The three 78s from Kent's cellar all showed very young and could easily go 10 more years. Both BV GDLs were great.
