What did you think of Mind to Devour. I really loved this beer. I thought it was pretty good - but it seemed to either be over carbed or maybe refermented a bit... foamed up like crazy on the pour and was super bubbly on the palate. I find those sleeves you keep in the freezer do a pretty good job of chilling a wine quickly... with a bottle already at cellar temp, it will chill very quickly, like 10-15 mins. https://www.amazon.com/Vacu-Vin-Rapid-Wine-Cooler/dp/B000GA2FVG/ref=sr_1_2?s=kitchen&ie=UTF8&qid=1487873943&sr=1-2&keywor...

North East style IPA - who else is doing it

I think its pretty difficult to find a widely distributed NE style IPA - at least at this point, its still a very regional / localized thing (though obviously catching a big wave of popularity), but in addition - I think the style really requires it to be super fresh - both for the hop character but...

45 minutes at what temp? 500 deg? At 300 it takes all of 2 hours to get to 165 in the breast and 180 in the thigh. Indirect, of course. On my 18in WSM it rarely takes more than an hour at 300. I have my probe in at all times with the timer counting up from zero. Are you smoking without a water pan?...
