I’ve never had a soju that I even remotely liked, though Koreans seem to drink it with meals at restaurants I frequent. There’s also a rice-based drink called makgeoli that hasn’t impressed me. Any brands anyone might recommend? Otherwise, a good dry sake might be just the thing.

Thanks for the note. I am a fan of Hank’s wines. I have limited experience with aging them, but that experience indicates they age well. He uses a lot of whole-cluster ferments, I believe, and no new oak. Always fun to taste his new releases. I believe I have a few of these somewhere.

The idea that 375s age “faster,” and magnums “slower,” is one of those things everybody “just knows.” However, I’ve certainly had 375s that aged beautifully, and mags that didn’t. Anyone ever encounter a shred of science on this topic?
