Haven't yet tasted the Downstream wines but the A Deux Têtes wines are very good. The Rose' is perhaps the best I've had from CA or anywhere for that matter.

I've just never not (double negative) seen a difference in side by sides (which, as I said, happen just about every year). I get where you are coming from with the perception -- but I think that the tannin addition, etc. more than compensates for any higher pH.

The idea that stems increase the pH is certainly 'theoretically' correct, but does not mean it happens in each and every situation. Not really sure about the "fat/porky" description. They were ripe and often higher in alcohol, but never went through ML and often had finished pHs in the 3.2 range and they never saw new oak.

I've purchased several of them off of wine lists and have always enjoyed them. They definitely show the whole cluster, which I don't mind at all, but they have a great vibrancy and backbone that makes them pair wonderfully with food.
