the bonavita has a pre-infusion and it's dirt cheap for how good the coffee is. no clue if it'll last 10 years, but for around $120 it's a no brainer. not only is the water tank graduated, but the lines have suggested coffee weights in grams. that is beyond delightful.

Thx, I will check that out. One can sharpen a serrate knife using a diamond or ceramic "honing" rod. It is a PITA but makes a big difference. Is there a huge variation in the air temperature such that you want to observe any potential variation in liquid temperature? If the air temperature is pretty steady, then the liquid temp will be too ... On multiple occasions, I’ve taken a bottle temperature with an infrared contactless thermometer...

my take is that if you like the nespresso, you should def stay with that. a dedicated machine plus a good enough grinder (more important than the machine imo) will likely frustrate you AND result in coffee that you won't like as much.
