I've always been a fan since the 2006 vintage. Sure prices have gone up, and I've had to decrease my buying slightly over time to fit my wine budget, but I love Horseshoe and Skyline, and I'll keep buying those as long as they make them.

it's really simple, once you make it once, you can fudge the recipe in the future.

Also make a huge batch once. Roll out extras and sandwich between parchment paper/saran wrap/foil and then ziploc/vacuum seal in the freezer. Then later on, just pan fry frozen. no need to defrost.

darn it, i'm hungry now and jook deprived. will need to make a batch this week.

To bump up the umami, I'll cook the rice with low salt chicken stock, dashi, or veg stock. Either 100% or watered down depending on my mood. Then I might add black or shiitake mushrooms.
