You will definitely need closer to 4000 BTU's, If you go with Wine Guardian "WG" go with an 050. One system isn't better than the other they are more application specific. Does the cooling unit blow on the door?
Does the door have a gasket around it?
Is the cooling unit properly sized to the cellar? You really should not need/want a dehumidifier in the cellar.
What is the RH outside the cellar?

I was there last march. The food was very good, the service impeccable and the wine list is amazing. We lucked out and got the best table in the house (corner by the window, wasn't expecting that). It's worth going for the list alone, so many wines under retail.

Most likely your unit has a refrigerant leak if it has gained temperature slowly. Soon it will stop cooling entirely and create heat. It would be best to shut it off before that happens, particularly if you have any hope of repairing the unit.
