Re: What's your favorite mustard? Fallot mustard photo added.

I made this Bon Appetit fermented mustard recipe for a couple of July 4th BBQ in Philly, and everyone loved it. Fermented sauerkraut juice kickstarts the fermentation. 135g Brown mustard seeds 119.5g Yellow mustard seeds 13.25g Yellow mustard powder 1/2 cup Apple cider vinegar 1/2 cup Verjus blanc 1...

Re: Boston Retail Scene?

Avoid Central Bottle in Cambridge. Their wines are good (if narrow) but the prices are tear-inducing. I believe they are no more, replaced by a shop called Social Wines which has a more normalized selection and pricing policy, and a very nice owner. That's too bad, they were always the best place t...

Re: Boston Retail Scene?

Really? A restaurant whose diners can bring their own wines seems more likely to keep a better wine list. Otherwise, unsold wines are dead money. FWIW, MA is a bit different in that if a restaurant has a liquor license, BYOB is illegal. (If they don't have a liquor license, the legality of BYOB dep...

After Maille from France, my second favorite mustard is this mild Dijon-style from Germany, Schwerter Senfmühle Adrian, which dates back 150 years. What do y'all think of deliberate selectivity in scores for vintages to suggest a higher score for a wine? When you go to Costco, you'll see a wine from an off vintage that got a low score, for example a 2013 Bordeaux that was 84 points, and they'll put: 2012 Wine Enthusiast 91 points 2014 Wine Spe...
