I use the Mineralité for Champagne, again because of how it focuses the aromatics. My wife uses a Liberté, and we share the glasses. Always fun to compare.

The Mineralite has turned into my everyday glass. I love what it does for aromatics, and the smaller size almost controls pour sizes. I need to get a 6 pack.

1999 was a much better vintage from the get go.

FWIW, the 1996 Geyserville was completely mature from a winery provided magnum at a dinner last month with Eric Baugher. Fascinating, complex wine, but at its peak and starting to slowly descend.

Those are challenging preparations.

The octopus could work with lots of things except there’s an ingredient to kill any wine. The branzino could work with various Italian whites.
