I was there today and the tasting was conducted by Allison. She said all employees were retained. What’s changed is the cab is being discontinued and the grapes go to Long Meadow Ranch. Spoke to Galen yesterday and he corrected me. The cab is going to continue. It will be vinified at the LMR winery...

Storing wine upright gives them structure and backbone. Leaving wine in a reclining position makes them prematurely soft.

Light carbonation maybe unusual for a zin, but it’s not unheard of for reds. The usual solution is to put your thumb over the neck and give it a bit of a shake.
I did this a few years ago with a 2008 Pegau with great success.

I’ve always decanted Sauternes the same way - young (13 years) or old (90 years) - at least an hour before and rest the decanter on ice to serve cool.

The only issue with Chardonnay is that it is grown outside Burgundy and Chablis. Also it can be grown in Champagne Ok. I will be magnanimous today.
