White burg, other than 'house wine' basic bourgogne, now represents about 1.5% of my wine collection. For comparison, red Burg is more like 60%. If no PremOx issues, I'd probably own 10-20x more white Burg. My goal is under 1%.

It really depends on the wine. A Mosel Riesling can stay open yet perfectly fine for several weeks, but I've had many white wines turn quite flat and dull even after a few days. It's such a good summer wine, on a hot day or evening. Goes great on a hot night with some roast chicken. Love the stuff for about 3 months a year. At $16, no brainer!

The shipping is a killer as it's 2 day. Ground would cut the price by $70 per case, or $6 per bottle. That's like a 2nd tax on the wine. Ah well, they are fantastic, what are you gonna do...

Yep. I mostly agree. At one point, a few decades ago, my cellar was probably 90% cab or cab mixed wines (left bank, Bordeaux). I just checked, I'm down to 16%. And pure cab is under 1%. Although I love Giacosa, the price of red label is getting to be so high that you may want to focus on the white labels, which are generally incredibly good, made in the same style, but at a fraction of the cost. There are all different grades / types of Japanese Wagyu. If you stick with A5, there are lots of different producers where the price can really vary. The year is just about over. I'm net down just over 10% (10.12% to be exact). A spectacular year. I set out to complete a task (get down 10% or more), had 365 days to fulfill that task, and here we are. For 2019, same task, get down another 10%.

Peter, How many vintages of Jadot Ursules have you had, and at what age? It's shaping up to being a very successful year, wine reduction-wise.
Looking at assumed consumption and purchases for the next 2.5 months, I'll end 2018 down about 10%.
That's also down 25% from my high point, 2013.

A delicious mine-field. Just interesting how to Burg guys, Jayer is perfection (and the very few I've had have been fantastic and delicious). Always fun to see Laurent (and Perrot Minot and others) described as using too much oak, wines being too oaky. Jayer generally used 18 months in new oak. Why ok (more than ok) for Jayer but not for others?
