My living doorbells alerted me to the FedEx truck pulling up, I went on my lower balcony and the FedEx guys just asked for my first and last name and they signed for me. I'm very pleased with how it went everything considered.

This Benchmark sale seems much better than the last one (for me). Got 2 2015 Myriad Napa Valley Cabs for $55 each, 2 2010 Torrin Banshee for $45/each and 2001 Max Ferd. Spatlese half bottle for $15. I just searched for things I was interested in instead of browsing bin by bin.

So, is the consensus a dry Riesling or a sweeter one? I'm making corned beef on rye and have some dry Riesling and Kabinett in the house. My gut tells me to go with the dry, but I saw someone mention Spatlese here, so I'm not sure.

I like Dragonette for their single vineyard Sauvignon Blancs (at a discount) and free tastings which I take advantage of somewhat regularly. I also like Torrin as some of their wines can be harder to get at retail, their tastings are lovely, and I really enjoy their pickup party.

I'm not a big Pinot enthusiast, but I think their single vineyard Pinots are pretty great. I find them to be very well balanced, elegant, and decently complex for their age. They tend to not have a ton of new oak, and they are a nice contrast to a lot of the bigger CA Pinots (which I also like).

I've never done Wagyu, but for normal short ribs, I sear then braise in the steam oven uncovered. If I was using a traditional oven, I'd cover for for most of the braising and uncover towards the end to get a bit of texture on the outside. Let us know how yours turn out.
