Din Tai Fung

There's Din Tai Fungs all over the place now, and I hear their corkage is affordable ($15 in Seattle). What's everyone's favorite wines to bring in to match the menu? Should I bring my own stems?

Opened a three year vertical (1989, 1995, 2003) of Catherine et Pierre Breton Bourgueil Les Perrières. It's such a good wine and hasn't let me down yet. The 89 was the best of the three, and easily had another 10+ years in it.
