Roumier used to have as much red as white soil . From 2016 (I think), he has added white soil. Red gives more structured solid wine, white soil leads to more refined fragrant earlier maturing wine. while we are drilling down. Can you comment on the red vs white soil of Bonnes Mares? In terms of what we are seeing? My understanding is Roumier is mainly White. Do we see red? and while we have a deep talk, can you comment on the profile imparted by red soil vs white?

just a suggestion, but have you tried the Immich-Batterieberg kabinett? aka kabinett trocken? it's really bone dry and still with fruit. very nice wine and a door to close before you walk away from Germany

may be off here but Levi Dalton said the distinction was the color. If too full/dark it's a rosato rather than a cerasuolo.
Does it change year to year based on regulations?
