Is there any more information on the reasons behind this decision? Did they have an unusually small production or something? Salon obviously isn't massively produced but this is the equivalent of ~1300 6 bottle cases in production; not a lot at all.

I've often wondered about home-made charcuterie, as the conditions are about perfect. Only issue is you can get some pretty interesting varieties of mould growth and I wasn't too sure how smart that would be around wine capsules.

That's the airspace above the bottom of the seal. There's a decent gap in their and the sealing ball needs to push up, too.

If you are pouring the entire wine bottle into the Eto, aren't you oxygenating the entire bottle of wine? Isn't that the most violent act you can do to a wine, which is pour it into a decanter? If you seal the decanter off air going forward, wouldn't this still be less ideal than say a Coravin? Or ...

Are there more people who had the opportunity to test eto ? Everyone who has one is satisfied ? I'm thinking of buying one. I use mine a lot. It does a good job upto the 7-10 day mark which is about all the preservation I ever need to do. Very happy and I'm considering a second so I have red+white....

Ridge have produced it up at Monte Bello in the past as part of the ATP. I tried the 1984 last year. Very good but probably not great.

I think there's a reason it hasn't persisted as a varietal in SoCal.

Well, this could be true of some EB wines. However, the Marie-Courtin Eloquence and Marguet Crayeres and Les Bermonts are anything but lean. These are zero dose wines and drink with an expression that to me is far from lean. Perhaps it's a different interpretation of the word lean - in this context...

I'd vouch for his wines. Good, traditional Cornas producer - he makes the real deal and is a decent value alternative to some of the super star producers if you actually want to drink the stuff.
