Spending a week hiking there in July- looking for ideas in Cortina, Bolzano, and surrounding...any thoughts on lodging too would be great -- we have 3 free days after staying mostly in Cortina. Thanks in advance!

The Smoker Thread - recipes, techniques, ideas

Been smoking a lot lately. Catching up on this thread, good stuff. Trout, pork chops, white king salmon (and one regular), halibut, shrimp and artichoke hearts. Also a tenderloin smoked then reverse sear. So good. https://image.ibb.co/mrrPh8/image1_3.jpg https://image.ibb.co/cBTbC8/IMG_0584_1.jpg ht...

Heading there in the Fall (would be the end of the season, more or less) for work and after getting so much great info on Costa Rica (which was amazing) I'd love to pick the collective brains again. I've looked through some past threads but would particularly love to hear about top restaurants/hotel...

Maui wine & dine picks?

ANYONE landing in Maui should be ordering some pickup from Tin Roof. The $6 fried chicken sandwich is incredible as is everything else (poke bowls, mochiko chicken, whatever specials...). This is a "locals" place (pickup only) in a little strip mall near airport (you have to order online) from Sheld...

Great remembrance Tom. Thank you. I met Donn briefly at a day long interview at Ridge and he seemed busy but friendly. New TRB Cab - killer- STONE THE CROWS

I tasted the '11 just recently. It's a huge success, to my palate. Maybe it's the vineyard, maybe its Thomas (of course it is those things and more, like age of the vines) but I might like it better than the '10. It is signature TRB for sure texture-wise, but a touch more elegant and complex, with a...

George- Absolutely not, ever. That was purely in jest to Ken V., who has been taking me to school (and to task) about Barolo for years. As to the machines, I frankly don't know as I have never owned one. I think most of them use nitrogen, as opposed to argon which is the gold standard (and expensive...

Testosterone aside, I just got mine and we are going to use it here at the warehouse for visitors. I think it's cool to be able to offer a lot of people a taste of d'Yquem or SQN or whatever over a long period of time, with little or no quality degradation. So do an Ironman and then drop by.

Funny- I figured out what reduction is for me fairly recently. It is the smell of Cheerios. It is even the wheat-y wheat bran taste/smell of Cheerios. Exactly. For me, anyway. Definitely get it in a lot of young Burg.

My go-to is Brandy Ho's. They smoke all their meats, and the Smoked Ham and Garlic is insane good.

My favorite Hunan place (no MSG) in SF did once tell that they could never do catering because standard stoves dont generate enough heat and it wont cook the food right.

No worries Bill. Brent is right BTW, generally retailers will be offering at the winery price for a tiny production, mostly mailing list type situation (if at all) as I think this will be. Or more, of course, if the market makes it so, e.g. SQN, etc.

He has a lot, but he's got one thing I think that makes it do-able- they are all made in one place (Outpost), which is unusual and I would think adds a lot more control to the winemaking and direction-giving to his assistants and whatnot. Much harder if you're runing around to 3 or 5 or 8 differnet ...
