Sorry for the late reply. A little citric acid in the soaking water works miracles, and then you don't have to rinse/neutralize the percarb after. So just water and citric acid.

Do any of you put Prop 65 warnings in your shipments going to California? If so, do you only put the warning about alcohol in the shipment (or on the box), or do you also include the BPA warning? Thanks in advance.

Alan this is not true. Berns is booked up solid for 6 months in advance. They do close to 1000 covers a night. The bar is also jam packed. There is a reason why they do 10:00 reservations. Stark's Steak & Seafood in downtown Santa Rosa is excellent. I can't remember having a better steak in a restaurant, outside of Japan. The wine list is very good too.

This seems like a paperwork headache for lots of small wineries. I prefer to ship all of our wine tax paid to the warehouse where we store. I believe we can take advantage of the new tax credit this way.

25 years is too important a celebration to be temporarily set back by a potentially sub par bottle of Burgundy. How many supposedly great Burgs have we opened that under perform? If you do go for the Lignier, as many have suggested, I hope it over performs.

Tim, By deacidifying, you'll probably get the malolactic kick started. I don't think the ML bacteria care about total SO2, and your free SO2 is virtually nothing.
