Sous vide cheesecake jars were a hit at christmas dinner. Prebake graham cracker crusts at 350 in the oven for 10 min then fill with the filling. Made 8 4 oz jars. 1.5 hr at 176 deg and 4 hours in the fridge. Good stuff!

Is the plus upgrade worth it on the Behmor? I am still using the older version but it is still going strong. I usually stick with the 1 - P3 - C roast profile for 10 oz of coffee. Making my way though 10 lb of Guatamala Patzun Finca Las Camelias from Sweet Marias right now.

Pasta Extruders?

Toying around with the idea of buying a pasta extruder. We usually use our kitchenaid attachment to roll/cut pasta dough but want to enable some other options shape wise. Does anyone have any experience with some of the models on the market? Any recommendations?

I tracked my wine and it left Sonoma this AM, where it was 65, towards Nevada where it’s in the 50s and 60s as is most of the Great Plains. In Chicago it’ll be 74 tomorrow and 50 Thursday. Downtown Cottonwood is fun. We were there a month or two ago and tasted at Merkin/Pillsbury/Burning Tree and they all had some decent stuff. Most of the fruit is from southern AZ. Jerome is a cool town and they have Caduceus cellars which makes some good wine as well (a bit overpriced though).

Everyday dinnerware recommendation needed

We recently invested in some Pillivuyt French Porcelain dinnerware from Williams Sonoma. We are very happy with all of the pieces thus far and they are oven/dishwasher/microwave safe. The last set we got a Sur La Table for our wedding turned out not to be microwave safe which is a deal breaker for us.

I tried making my first batch of Soppresatta with a starter culture and it was way too acidic. Since then I have just been using wine and a bit of dextrose and the results have been much better flavor wise.

What kind of chamber is that? I was thinking of aging in my wine cellar. It is a True GDM-10 I bought off of craigslist. I put a temperature and humidity controller on it. Works pretty well. My cellar is small and we don't have basements here so it was my only option for some temp/humidity control.

Anova Sous Vide Cooker

Sous vide is definitely a kitchen game changer. It is so nice to be able to throw something in and forget it. We pretty much exclusively cook steaks sousvide now. Sausage is also good. I also like Kenji Lopez recipes for the sousvide over on seriouseats. Definitely a worthwhile purchase if you ask me.
