Dan I’d certainly try that. With a caveat. 70% @150. No reason to take the bird past it’s over cooked threshold. You simply need it hot to eat. For reference, I had a chunk of strip streak left. The next day I did 70% & 125. Took about 30-40 minutes. But. The results were a warm piece of rare steak.

Count me as a big fan of Made In. Have some Misen too, but really prefer the Made in. I can see why how you use them (hot handles above) could be an issue. But, I really love mine. My favorite is the saucier but the 2QT sauce pan (which wasn’t available for sale recently?) is a go to pot/pan for me....

The Victorinox Fibrox knives and a USPS flat rate box are a great solution to this. For about $100 you can put a well-above average 'travel kit' you can send ahead and send back to avoid any TSA issues. But, knives before glasses....says the glass guy.
