Any Tea Aficionados Out There?

My friend Dave served me some Pu-Erh last night, a 20 yr old. It was astounding--changed everything I've ever thought abouth this variety. Just an amazing and utterly unique experience. After studying/working/living in china, it is all about the pu'er. By far my favorite. Dirty and earthy goodness!...

Awesome review and obviously left a deep impression on you. I was in Megeve as a young, broke student visiting family friends, but loved the area, and this only makes we want to return and experience it in a different way.

My wife and lived in Shanghai for 3 yrs, Beijing for a year, Hong Kong for a year, Singapore for 2 years. Many trips to the other countries for both work and play. Visiting La Rioja

Just did a short trip there 2yrs ago. Stayed one night in Logrono as my wife has extended family there. Great to walk around at night and eat the 1€ pintxos(tapas) from bar to bar. Not very good wine, but great food. Plenty of good wine bars/shops though. Stayed 2 nights at Marques De Riscal. Gehry ...

Cast Iron- share all your favorite tips/tricks/recipies

I always cook cornbread in a well-seasoned, old, cast iron skillet. Preheat oven to 425. Make your favorite cornbread batter. Put the skillet in the oven to heat fully. Add a TB of butter to the pan and let it heat for a minute. Pour in the batter and cook until done. I always turn on the convectio...

Consistently NZ's best pinot noir ... ?

To revive an older thread - I have visited the South Island 2 times in the last 6 months and attended multiple NZ vs Aus pinot events. How old were you when you started collecting wine?

Like others have stated, early 20s found that I really enjoyed good wine - not 'collecting' but more about tasting/trying/exploring. About 8 yrs ago (~ 30yrs) started getting onto lists or taking allocation from friends/family on other lists.

How do you know a wine will be good years in the future?

Complete work in progress but, after a few years, I have started to find drinking windows for wines that suit me and my tastes. (100% subjective and where my tastes are at the moment) While my cellar is not large (~120btls and not too widely varied) I have found the following and clearly my tastes l...

I have the good fortune to be based in Australia for an extended period for work. How do you know a wine will be good years in the future?

I have the good fortune of being away from my cellar for a couple of years while working overseas so it is trial and error and a fun experiment. I get to pop a few bottles 1-2 times a year and see how they are aging.
