My first thought was new world Pinot (cola notes). Other than that thinking about cel-ray, the primary flavor profile I get is raisins...perhaps an amorone to play off of that profile

Around 70% American whiskey (300+). Of the 25% left over mostly CA with some smaller amounts of Bordeaux, burgundy, Germany.

07-08 PVW had the dot matrix dates (although easily could have worn off over last many years)
04-06 PVW had embossed labels
You should check the embossing of the label as would provide a pretty definitive date of most likely 2006 from the information you provided.

I don’t know if in any way part of cause but I believe Texas also has a pretty high liquor sales tax within restaurants. Maybe 10 years ago I think in Houston it was 14% of sales with only 6% allowed to be passed on to customer as add on to bill.

Bourbon / Rye secondary market has been getting progressively more silly for last 2-3 years as it has extended to lots of standard issue bottles like Weller, Blantons, ETL, eagle rare, etc. That being said, there are a very small number of truly transcendent USA whiskeys that deserve to be priced at...

Yes absolutely. I spent 4+ years pretty focused on American whiskey amassing a bunker of 250+ btls (plus 50 or so open). I have now significantly reduced the whiskey side of purchasing which has allowed me to reallocate a bit back to wine.
