Re: Favorite Bordeaux non vintage of the century

I have found very few 2009s that I like and the 2010s I have had just don’t measure up to 1982s and 2005s I have had or frankly even 1996s. Big fruit isn’t everything. The best Bordeauxs combine richness with freshness and elegance. I'm not arguing as to what your palate is, but what's critical con...

Re: An important tasting of Chateaux Magdelaine and Bel-Air Monange, 1970-2014 with a 1971 Figeac "ringer"

Re metallic tastes I started a thread on this in Dec 2016 (don’t know how to link from my phone) and most agreed the taste comes from Brett. Howard said it is from over the hill wines. I had noticed it from early 70s Bordeaux. And yes 21 may seem old to say young but I have a predilection for pushin...

Thanks for the notes. I have had the 70 and have more bottles. Thinking about popping a 98 for experimentation as I need more exposure to younger versions of the wine.

I've never had a Cab "from the back side of Diamond Mtn" that tastes like Tor ToKalon. Notice also that it does not say "Napa." Technically, if you read it one way, the "back side of Diamond Mtn" might be Sonoma.

Re: Favorite Producer

Based on this logic, Ridge wins easily for me. And indeed, adding up all the various bottlings in my cellar from a given producer, Ridge is my largest holding by a good margin. For the Francophiles, Baudry fits that bill. A couple of whites, a Rose, two basis cuvees and three premium cuvees. Too ba...

I was in the Loire valley a few days ago, visiting producers in the savennieres and Anjou area (some world class wines being produced there those days). They’ve lost 100pc of the potential 2019 harvest to frost. And that’s after losing a bunch of the 2017 harvest to frost. That’s incredibly tough f...

Re: What green vegetable goes best with red wine

I'm very sensitive to bitterness, and these would all destroy my palate for wine. I think it's important to keep in mind that there might be other people like me at this event. Do you mean to include fennel? I don't find it bitter at all. Quite the opposite. And for me roasted endive has only a tra...

Re: What green vegetable goes best with red wine

If you are trying to impress, with the season, I do some hops sprouts (almost just like asparagus when they sprout) with fiddleheads and morels. Morels (I know, fungus) go great with wine. Red bud flowers and locust flowers are edible and great with a bit of walnut oil. It's also the season for ram...

I like the endive suggestion and also suggest braised fennel and also mustard greens. Or dandelion greens or collard greens.

In the South they fry lettuce in bacon fat, but you can certainly use a different oil.

Yes dandelion greens would be a more contrasting taste - to refresh the palate and inspire further wine drinking.
