I've been thinking about getting the Gozney dome. It's the closest prosumer oven similar to what I was working with in Naples. But sadly they are on backorder.

Used to buy from them when I lived nearby and could walk in. Haven't purchased online. The building doubles as a wine lockers so everything is cellar temp and the wines were always in good condition.
