we're a fan of opening Vietti Castiglione for thanksgiving, pairs well with the food and the label kinda reminds you of a traditional cornucopia arrangement

peter liem mentions Maillard reaction in his champagne book, describing it as the interaction between amino acids released by yeasts and the sugar from dosage, to create a brioche like flavor I guess that could happen with pinot noir, no dosage but the fruit would have higher sugar to begin with? No...

definitely cornas, gamey is always a descriptor that comes up, some cdp with age can have some meatiness as well, had a peagu that had some bacon notes, would also look at aged mouvedre, bandols with age can be quite savory

Got my order in for 3+3

From the last allocation, I opened one of each of the 2012 soon after release and they felt a little austere, thinking a few years of age will make them develop beautifully

Does anyone know how the "wishlist" works? Do you hear about it closer to release or when they ship?
