Re: TN: 2016 Bedrock Wine Co. Syrah Sky Vineyard (USA, California, Napa Valley, Mt. Veeder)

Same vineyard as the Sky Zinfandel that bears that as the winery name? I assume so. Those 2013s were showing young, so I guess your experience with the same vineyard three years younger makes sense. I know a lot of those traits can be brought about through the winemaking process, but still... Thanks...

Correct. Bourbon doesn't change in the bottle. Old bourbons, or dusties, are awesome. Had a '79 Old Taylor and it was super smooth, reminding me of wine. It made the new Willett 6 seem silly, which is saying a lot. I usually give my whiskies some air in the glass, like I do with wine. I've also had...

How does Bourbon change when left in bottle, unopened, for a long period of time? If I got my hands on some higher-end stuff, could there be any benefit to putting a bottle in the cellar (upright, correct?) for a few years? Or, does old Bourbon just taste...old? In my somewhat limited experience, even when Bordeaux are riper than normal and at higher alcohol levels, they still don't smell or taste at all like California wines. They just don't. The fruit has a different profile, there are different secondary notes, etc.

Do you ever have trouble with the sugar in the rub burning? When I go direct with sugar (whether rub or leftover from a brine) it can be tricky to get a nice sear without the sugar burning. Tips appreciated.

Okay, so this has clearly and unintentionally become a discussion of winery vs. vineyard vs. production, etc. The point of the tasting was NOT to get lost in those details but, rather, compare and contrast Syrah from the PacNW.
