Re: Tannin Descriptions

Hey Matt--here's a great Clark Smith article where he gives names for tannins at different points in development of a wine: https://www.winesandvines.com/columns/section/92/article/78078/Astringency-And-Harmony-In-Tannins. Fair amount of chemistry in the article, but not needed for the definitions.

Re: Yield Per Vine

You might enjoy reading "Terroir and Other Myths of Winegrowing" by Mark A. Matthews. About a third of the book is dedicated to the "myth" of the importance of yield, the genealogies behind the common beliefs about different yield metrics people focus on, etc. My take away was that yield (any way yo...

What have you learnt on your wine journey?

That the more I learn, the more I realize there is still to learn or yet to be understood.

Looking for 1/2 ton bins and neutral barrels

It's my first year buying from them (so I'll tell you in a year how it went!), but Heritage Barrels has been really helpful--they (I think with Premier Wine Cask) seem to broker a ton of used (to neutral, which I'm getting) barrels. Was a bit nervous, but they apparently have consistent sources they...

DIAM cork retailers and shelf life

Love Diam! I use them for a project I have in Spain--my supplier there told me to use them within a year. I may be nuts, but have a feeling that many people that open the bottles may not realize it's not a natural cork (looks similar enough they may not think twice)--that said I regretfully bought u...

Fruit Transport - Deleterious?

Thanks, Joe! Bonar bins for the insulation?--(vs using a flex tank or something?).

Stainless Tank Preferences & Suppliers

Thanks, Joe and Bill! Any recommendations for solid stainless brands--maybe not the best of the best (trying to keep costs relatively low for the first year)--but won't give me trouble?

Fruit Transport - Deleterious?

In a similar vein, I've been wondering about +/-'s of crushing/destemming or pressing at/near the vineyard and then trucking the must (kept cold, of course), rather than the grapes--anybody have any insight on this?

Stainless Tank Preferences & Suppliers

Hi Everybody, I'm an importer and home winemaker and starting a tiny commercial winery in CA this year. Thinking particularly in terms of whites (buying about 2.5 tons), I was hoping some of you wouldn't mind sharing your preferences and thoughts on the myriad of options and suppliers of stainless t...
