Re: Using corked wine making Coq au vin

I only save corked bottles for offlines with Alan R and Craig G. neener But on a serious note, I have used corked bottles of reds in pasta sauces. No off flavors or aromas detected by anyone. I have a higher sensitivity to TCA than the WBers that I regularly offline with (for better and worse).........

For the people voting over $100, how many bottles of Champagne do you have? 52 different labels and/or vintages, totaling 366 bottles. 60% are tête de cuvée, with the remainder being almost all NV that I got on markdown at Costco or bought in bulk from private parties. If you’re not feeling too adventurous, then you can always make bacon with it. I’m assuming you bought the skinless cut. If you’ve got access to a Business Costco, they’ll have the skin on pork belly usually available. Then you have options to do porchetta (if you also procure a pork loin), or Chine...

More often than not, the lower prices for the same items at different Costcos is attributable to the presence of a Total Wine location nearby. This is especially noticeable with the higher profile “usual suspects” like Dom Perignon, NV Veuve Clicquot and name brand liquor.
